[Feature]: Improve documentation for extensions.yml

Problem Statement

I have been playing with some extensions and I found the documentation for extensions.yml is quite scarce.
In particular, looking at how auto_execute_hooks works (despite clear in principle) or how each hook could be configured, I found there's nothing on the documentation.
The search returns nothing for the auto execute, for instance.

There's the opportunity to improve this part.

Hi! I'd like to work on improving this documentation. I inspected the repository and found the existing extension documentation in docs/reference/extensions.md and the extension guides, while hook behavior is implemented across the command templates. I plan to document the .specify/extensions.yml structure, explain auto_execute_hooks and hook configuration/behavior, and include practical examples based on the existing implementation.
