Bump java-profiler (ddprof) to 1.48.1

What Does This Do

Bumps java-profiler (ddprof) from 1.48.0 to 1.48.1.

Motivation

Noticeable changes

• Gracefully disable the profiler instead of crashing when libgcc_s.so.1 is unavailable by @zhengyu123 in Missing libgcc_s.so.1 on the host should not result in crash java-profiler#689
• Avoid retaining invalid HotSpot VM method pointers during stack walking and JFR serialization by @jbachorik in Avoid retaining invalid VM method pointers java-profiler#699

These fixes were backported to the 1.48 release line in DataDog/java-profiler#711.

The update consistently moves both the version catalog and all ddprof lockfile configurations from 1.48.0 to 1.48.1; no source or packaging behavior changed, so no diff-only regression was found. Full Gradle compilation could not run because the wrapper distribution was unavailable and the installed Gradle required an unavailable Java 25 toolchain.
